Tequila Chipotle BBQ Glaze:
Mix all ingredients. Heat on medium for 5 minutes before use. Cook out some of the alcohol if necessary. Yields 1 1/2 cups.
To Build Entree:
Grill jumbo shrimp and baste with glaze. Prepare creamy polenta stirring in roasted poblano peppers, shredded cheddar and Jack cheese until melted. Serve in a shallow bowl. Top with shrimp. Garnish with chopped scallions and a lime wedge.
