Grilled Chicken Sandwich with Smokey Yellow Mustard Aioli

A toasted 9-Grain bun is spread with light aioli that's laced with French’s® Classic Yellow® Mustard, and smoked paprika then topped with lettuce and a grilled chicken breast covered in caramelized onions and sundried tomatoes.


This healthy halo option has the ingredients that the consumer recognizes as better for them; a 9-grain or wheat bun, lean grilled chicken and aioli made with light mayo and mustard. Smoked paprika is trending well as a spice in the inception phase of the flavor development curve.


  • 1/4 cup
    French's® Classic Yellow Mustard
  • 1 cup
  • 1 tsp.
    Roasted garlic
  • 1 Tbsp.
    Smoked paprika
  • Salt
  • 2 Tbsp.
    Caramelized onion
  • 1 tsp.
    Sundried tomatoes
  • 1 each
    9-Grain bun
  • 1/4 cup
  • 1 each
    Chicken breast, boneless


  1. For Smoked Mustard Aioli: Combine first 5 ingredients. Hold refrigerated for service. Yields 1-1/4 cups.
  2. To Build Sandwich: Combine caramelized onion and sundried tomatoes; set aside. Spread top and bottom buns with 1-1/2 Tbsp. each Smoked Mustard Aioli.

Tips . Hints . Variations

  • This aioli can also be made with a 50:50 blend of light mayo and Greek yogurt for greater wellness appeal.
  • Inexpensive onion and aioli replace the need for cheese on the sandwich.
  • When tomatoes are well priced and in season, omit the sun-dried tomatoes and add sliced fresh ripe tomatoes.
  • Sliced avocado is also a nice addition.
  • This aioli can be thinned with skim milk or fresh lime juice to create a signature salad dressing.
  • Check freshness of smoked paprika.
  • If the container is not closed tightly the smoky aroma can dissipate.
