PORTOBELLO MUSHROOM SLIDERS
Ingredients:
| 1/2 cup | Mayonnaise |
| 2 tbsp. | FRANK'S® REDHOT® Original Cayenne Pepper Sauce |
| 1 tbsp. | Chopped cilantro |
| 48 each | Portobello mushroom caps, 3-3 1/2” diam. |
| as needed | Oil |
| 2 1/4 pounds | Ground beef |
| 6 oz. | Pepper jack cheese |
| 1/2 cup | Caramelized onion |
| 24 each | Small lettuce leaves |
| 24 each | Sliced roma tomato |
| as needed | Melted butter |
| as needed | Toasted sesame seeds |
Procedures:
1. To make the spicy mayonnaise, whisk mayonnaise smooth and stir in RedHot sauce and cilantro. Refrigerate until needed.
2. Remove gills from mushrooms, brush with oil and roast until softened, reserve for service.
3. Form ground beef into 24 1 1/2 oz. patties. Refrigerate until needed.<br><br>4. For each serving, grill 2 burger patties and top each with 1/4 oz. jack cheese. When cheese has melted, top each burger with 1 tsp. caramelized onion. Brush each inside of 4 mushroom caps with 1/2 tsp. RedHot mayonnaise. Lay lettuce leaf on 2 caps and top with burgers and tomatoes. Cover with remaining caps, brush tops with butter and sprinkle with sesame seeds.
