HONEY BBQ SHRIMP SKEWERS WITH MANGO CHUTNEY
Ingredients:
| 32 each | Jumbo shrimp, peeled, deveined, tail-on, uncooked |
| 4 cups | CATTLEMEN'S® Mississippi Honey BBQ Barbecue Sauce |
| 8 each | Skewers, wooden, 6-inch |
| 1 cup | Mango chutney, commercially prepared |
Procedures:
1. Combine shrimp and BBQ sauce in a bowl; toss to blend. Refrigerate 1 hour.
2. Soak skewers in water to avoid burning on grill. Remove shrimp from marinade and thread four shrimp per skewer. Grill approximately 1 to 2 minutes per side or until cooked through.
3. To assemble single serving, portion 2 skewers on plate and serve with 1/4 cup mango chutney in a ramekin. For a complete entrée, serve over a bed of rice or stir-fried vegetables.
