CHILI BEEF SALAD
Ingredients:
| 12 qts. | Asian salad greens |
| 3 cups | Thinly sliced red pepper |
| 3 cups | Shredded carrots |
| 3 cups | Cucumber half moons |
| 1 1/2 cups | Thinly sliced red onion |
| to taste | Salt and pepper |
| 1 1/8 cups | Prepared sesame dressing |
| 36 each | Wonton wrappers |
| 1 1/2 cups | FRANK'S® RedHot® Sweet Chili Sauce, divided |
| 2 1/4 lbs. | Sirloin, grilled, medium rare, sliced on a bias |
Procedures:
1. To make each salad toss 4 cups of greens with 1/4 cup red pepper, 1/4 cup carrots, 1/4 cup cucumbers, 2 tbsp. red onion, salt and pepper and 1 1/2 tbsp. sesame dressing. Cut one wonton skin in half to make two triangles, deep fry with two other skins and brush skins with 1 tbsp. sweet chili sauce. Mix 1 tbsp. sweet chili sauce with 3 oz. beef.
2. To assemble salad place 1/3 of lettuce mixture piled high on a chilled plate, top with wonton skin and 1/3 of the sliced beef. Top with 1/3 of lettuce mixture, wonton skin, 1/3 beef, remaining lettuce, then beef. Garnish with glazed triangle wontons.
