BBQ CHICKEN WONTONS WITH SPICY DIPPING SAUCE
Ingredients:
| 2 cups | Finely diced cooked chicken meat |
| 3/4 cup | Minced scallions, divided |
| 2 3/4 cups | CATTLEMEN'S® Memphis Sweet Barbecue Sauce, divided |
| 1 tbsp. | Grated fresh ginger |
| 1 tbsp. | Softened cream cheese |
| 2 2/3 tbsp. | Sesame oil, divided |
| 1 tsp. | Soy sauce |
| 96 each | Wonton wrappers |
| 1/3 cup | Rice wine vinegar |
| 1/3 cup | Chili sauce |
| 2 tbsp. | Water |
Procedures:
1. To make the wontons combine chicken, 6 tbsp. scallions, 1/2 cup Sweet Sauce, ginger, cream cheese, 2 tsp. sesame oil and soy sauce. Working with a dozen at a time, lay wontons wrappers on lightly corn starched dusted surface and place 1/2 tsp. filling in center of each wrapper. Wet edges of wonton lightly. Fold each wonton corner to corner, and then fold outside edges to corner. Wrap airtight and store in freezer.
2. To make the dipping sauce combine 2 1/2 cups Sweet Sauce, rice wine vinegar, chili sauce, water, 6 tbsp. scallion, 2 tbsp. sesame oil. Reserve until needed.<br>3. For each serving deep fry 8 wontons and serve with 2 oz. dipping sauce.
