  • 2 tbsp. Vegetable oil, hot
  • 2 cups Onions, thinly sliced
  • 12 cups Zucchini, julienned into 2” spears
  • 2 cups Yellow corn, whole-kernel, drained<br>(frozen or canned)
  • 1/4 cup Pimentos, diced
  • 1/4 cup FRANK'S® RedHot® Original Cayenne Pepper Sauce
  • 2 tsp. Cilantro, dried
  • 1 tsp. Cumin, ground


  • 1. Combine oil and onionsin large skillet. Sauté over medium-high heat for 2 to 3 minutes, or until onions become translucent.
  • 2. Add zucchini to onions. Sauté for 4 to 5 minutes, or until zucchini is tender yet crisp. Do not overcook.
  • 3. Add corn, pimentos, hot sauce, cilantro and cumin to onions and zucchini. Simmer for 8 to 10 minutes, or until corn is thoroughly heated.
