SHREDDED CHICKEN AND CABBAGE SALAD

Ingredients:

  • 1 cup FRANK'S® RedHot® Sweet Chili Sauce
  • 1/4 tbsp. Olive oil
  • 4 tsp. Rice wine or cider vinegar
  • 4 tsp. Soy sauce
  • 4 tsp. Sesame oil
  • 6 cups Cooked, finely shredded chicken
  • 3 qts. Finely shredded savoy cabbage
  • 3 cups Shredded carrots
  • 3/4 cup Thinly sliced red onion
  • 3 cups Bean sprouts
  • 3/4 cup Cilantro leaves
  • 3/4 cup Chopped peanuts
  • 6 qts. Lettuce mix

Directions:

  • 1. To make the dressing for the salad whisk together sweet chili sauce, olive oil, vinegar, soy sauce and sesame oil. Refrigerate until needed.
  • 2. To make each salad toss 1/2 cup chicken, 1 cup cabbage, 1/4 cup carrots, 1 tbsp. onion, 1/4 cup sprouts, 1 tbsp. cilantro leaves and 1 tbsp. peanuts with 2 tbsp. dressing and mix until ingredients are well coated. Serve over 2 cups of salad mix.
