  • 4 cups Tomatoes, canned, drained, diced
  • 3/4 cup FRANK'S® RedHot® Original Cayenne Pepper Sauce
  • 1 cup Onions, chopped
  • 3 tbsp. Cilantro, dried
  • 1 tsp. Garlic, minced
  • 6 cups Avocados, chopped
  • as needed Vegetable oil
  • 20 each Flour tortillas, 8 inch
  • 10 cups Monterey Jack cheese, shredded
  • as needed Limes, cut into wedges


  • 3. To prepare quesadillas to order: Brush surface of tortilla with oil. Lay oiled side on preheated 350 °F flat-top. Sprinkle tortilla with 1/2 cup cheese; fold in half. Fry for 2 to 3 minutes on each side, or until golden brown. Remove from grill. Cut into 3 wedges. Serve with 1/3 cup Avocado Salsa and lime wedges.
  • 1. To make the avocado salsa combine tomatoes, RedHot, onions, cilantro and garlic in large bowl. Stir well.
  • 2. Fold avocados into tomato mixture. Cover and allow to rest at room temperature for 30 minutes before serving.
