PORTOBELLO MUSHROOM AND CHICKEN PIZZA

Ingredients:

  • 2 cups CATTLEMEN'S® Kansas City Classic Barbecue Sauce
  • 1 1/2 cups Olive oil
  • 1 cup Balsamic vinegar
  • 24 each Portobello mushrooms, large (6”) cleaned
  • to taste Salt and pepper
  • as needed CATTLEMEN'S® Kansas City Classic Barbecue Sauce
  • 2 lbs. Chicken, grilled, diced
  • 24 oz. Mozzarella cheese, shredded
  • 1 tbsp. Oregano leaves, dried
  • as needed Olive oil

Directions:

  • 1. Mix together barbecue sauce, oil, vinegar salt and pepper. Marinate mushrooms in mixture for 1 hour.
  • 2. Grill mushrooms on both sides for about 2 to 3 minutes; turning once. Place on tray topside down. Spoon barbecue sauce on inside of mushroom. Top with chicken, cheese and oregano. Drizzle with oil. <br>3. Bake in hot oven until cheese is melted and golden.
