LOW COUNTRY SHRIMP AND RICE

Ingredients:

  • 3 lbs. Bacon, cut into large pieces
  • 1/2 gal. Onions, chopped
  • 5 cups Green bell peppers, chopped
  • 1/2 cup Garlic, fresh, crushed
  • 4 lbs. Rice, long grain
  • 12 lbs. Tomatoes, canned diced
  • 1 1/2 gal. Chicken Stock
  • 2 cups FRANK'S® RedHot® XTRA HOT Cayenne Pepper Sauce
  • to taste Salt
  • to taste Black pepper
  • 15 lbs. Shrimp, peeled, deveined
  • 1/2 cup Parsley, fresh, chopped

Directions:

  • 1. Cook bacon and reserve fat. Chop bacon into small pieces and save for garnish.
  • 3. Add rice and cook for 2 minutes, being careful not to brown the rice.
  • 5. Stir in shrimp and cook for 5 minutes.
  • 6. Top each portion with reserved bacon and parsley.
  • 2. Sauté onions, peppers and garlic in remaining bacon fat for 3 minutes.
  • 4. Add tomatoes, stock, hot sauce, salt and pepper and bring to a boil. Reduce heat and simmer, covered, for 15 minutes.
