GRILLED SALMON SALAD WITH HONEY MUSTARD ORANGE VINAIGRETTE

Ingredients:

  • 1 cup FRENCH'S® Honey Mustard Dipping Sauce
  • 1 cup Red wine vinaigrette
  • 1 cup Orange juice
  • 2 tbsp. Minced shallots
  • 2 tbsp. Orange juice concentrate, thawed
  • 9 qt. Romaine lettuce blend
  • 3 cups Julienne red onion
  • 12 each Grilled salmon fillets, warm
  • 60 each Grilled asparagus spears
  • 48 each Orange segment slices
  • 3/4 cups Sliced toasted almonds

Directions:

  • 1. To prepare honey mustard orange dressing: combine honey mustard sauce, red wine vinaigrette, orange juice, shallots and orange juice concentrate in bowl and whisk to blend. Cover and refrigerate to hold.
  • 2. To prepare each salad: arrange 3 cups loosely packed lettuce on plate. Top with 1/4 cup sliced red onions, 1 salmon fillet, 5 asparagus spears, 4 orange slices and 1 tbsp. almonds. Drizzle 1/4 cup dressing over salad.
