  • 11 tbsp. Olive oil, divided
  • 1 tbsp. Minced garlic
  • 1 1/2 cups Diced onion
  • 7 1/2 cups Peeled diced tomatoes
  • 3/4 cups Chopped Mandarin orange segments
  • 1 tbsp. Chopped cilantro
  • 3/4 cups FRANK'S® REDHOT® Original Cayenne Pepper Sauce
  • 1 tbsp. Lime juice
  • 24 each Corn tortillas
  • 24 each Eggs
  • 1/4 cup Shredded cheddar cheese


  • 2. For each serving, briefly sauté 2 corn tortillas in 1 tsp. olive oil, hold warm in oven. Whisk 2 eggs and scramble in 1 tsp. olive oil. Remove tortillas from oven, top each with 1/4 cup ranchero sauce, spread scrambled eggs over sauce and top with cheese. Return to oven to melt cheese.
  • 1. To make the ranchero sauce, heat 3 tbsp. oil and sauté garlic and onion until soft. Add tomatoes and simmer for 10 minutes. Add orange, cilantro, RedHot, and lime , simmer for 2 minutes. Cool and refrigerate and reheat as needed, or hold hot for service.
