CHEESE QUESADILLAS WITH SPICY AVOCADO SALSA

Ingredients:

  • 100 each Flour tortillas, 10”
  • 3 lbs. Monterey Jack cheese, shredded
  • 3 lbs. Provolone cheese, shredded
  • 1/2 cup FRANK'S® RedHot® XTRA HOT Cayenne Pepper Sauce
  • 10 cups Avocado, fresh or frozen, chopped
  • 10 cups Tomatoes, fresh, chopped
  • 2 cups FRANK'S® RedHot® XTRA HOT Cayenne Pepper Sauce
  • 3 cups Red onions, diced
  • 3/4 cup Cilantro, fresh, chopped
  • 1 1/2 tbsp. Garlic, fresh, crushed

Directions:

  • 1. To make the quesadillas spread 50 tortillas with approximately 2 tablespoons of each cheese and 1/2 teaspoon Xtra Hot Sauce. Cover with another tortilla and heat in a baking pan in the oven until cheese is melted. Cut into wedges.
  • 2. Salsa: Mix avocado, tomatoes, hot sauce, onion, cilantro and garlic together well, being careful not to smash avocado. Serve quesadillas topped with salsa or serve salsa on the side.
