BLACK BEAN SOUP

Ingredients:

  • 1/4 cup Olive Oil
  • 2 cups Carrots, diced
  • 2 cups Yellow Squash, diced
  • 2 cups Zucchini, diced
  • 1/4 cup Garlic, minced
  • 1/4 cup Chili Powder
  • 1/4 cup Cumin, ground
  • 1/2 gal. CATTLEMEN'S® Smoky Barbecue Sauce
  • 3/4 gal. Chicken stock
  • 2 lbs. Black beans, soaked & blanched
  • 6 each Green Bell peppers, charbroiled
  • 2 each Red onions, charbroiled
  • 4 each Jalapenos, charbroiled

Directions:

  • 2. Add the barbecue sauce, stock and beans. Bring to a boil, then simmer for 30 minutes.
  • 3. Chop the charbroiled peppers and add at the end.
