  • 1 qt. Chopped bacon
  • 2 qts. Diced onions
  • 2 tbsp. Minced garlic
  • 2 qts. Crushed tomatoes
  • 2 1/2 cups CATTLEMEN'S® Gold Barbecue Sauce
  • 1 1/2 cups FRANK'S® REDHOT® Original Cayenne Pepper Sauce
  • to taste Fresh chopped thyme
  • 1 1/2 qts. Heavy cream
  • 12 lbs. Cleaned mussels


  • 2. For each serving, put 1 cup cooking liquid in a sauté pan with a cover and add 1/2 cup heavy cream. Add 1 lb. mussels, cover and heat to a simmer. Cook shaking the pan until all mussels have opened. Spoon mussels into serving dish and drizzle with cooking liquid.
  • 1. To make the cooking liquid for the mussels, sauté bacon in a sauce pan over low heat until bacon browns and fat is rendered. Remove bacon from pan and reserve. Add onions and garlic to bacon fat and sauté until tender. Add tomatoes, BBQ sauce, RedHot sauce, reserved bacon and thyme. Simmer for 10 minutes. Remove from heat, cool and refrigerate until needed.
